INTO THE SOIL

“Like with gardening, it’s not actually me that does the work. I just provide the environment.

like, I don’t create beans. I am so very far from knowing how to do that. I just make a space where beans can manifest themselves.

And it’s the same thing with fermentation. I don’t change raw beans into fermented beans that are sour and keep for a very long time. That’s not what I’m doing. I’m just chopping vegetables and adding salt in a way that is suitable for lactic acid bacteria.”

“To stay with the trouble. To be able and to give space to the enormous difficulty of seeing what’s happening and stay with it. And things will change”

I hope the future is beyond my capacity to imagine it. I hope it’s beautiful”
